This is a very creamy tofu and mushroom based spread. For this first time I’m gonna be using it to dress some pita sandwiches, but it can be served as a dip for appetizers or with some regular bread/crackers.
What you’ll need (makes around 1 cup):
100g tofu
5 garlic cloves
1/2 onion
5 medium mushrooms
Procedure:
Chop everything into small cubes.
Stir fry the onion and garlic in some olive oil. Then add the mushrooms and mix a bit.
Finally add the tofu and spice it up with some salt and pepper to taste. Continue to mix until you notice that the tofu gains some golden/brown colored borders.
Let this mixture cool down and then, with the help of a food processor or mixer, blend all of the ingredients.
Season with 1 tablespoon soy or tamari sauce. The final result should be a creamy spread.
EXTRA:
I’ve made a short video in which I explain this recipe.
This video also includes some sights of my last visit to the Farmer’s Market that takes place every Saturday in Mechelen (Belgium), the city where I live.

Hello, I'm Vanessa.
I was born in Panama, Latin America, and have been living in Belgium for a couple of years now. Cooking is one of my biggest passions and I've always enjoyed writing, so I put those two together and started this blog.
I'm constantly experimenting with different ingredients in the kitchen and am very interested in empowering and healthy foods and practices. Lately, I've been getting into food photography and styling to spruce up this blog.
It fills me with joy sharing all this knowledge and experience with the world! Hope you enjoy Vanevalentine Food!
